Tender Goat Shoulder Slow-Roasted to Perfection

Ingredients

  • 1 shoulder of goat (about 3-4 pounds)
  • 3 preserved lemons, quartered
  • 6 cloves garlic, minced
  • 1 tablespoon fresh coriander, chopped
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • Salt and black pepper, to taste
  • 1/2 cup water
  • Fresh coriander sprigs, for garnish

Directions

1. Preheat and Prepare the Meat

  • Preheat your oven to 325°F (165°C).
  • Trim any excess fat from the goat shoulder. Rub the meat with olive oil and generously season with salt, black pepper, ground coriander, cumin, paprika, and cinnamon.

2. Prepare the Marinade

  • Slice the preserved lemons into quarters and mince the garlic. In a bowl, mix the preserved lemons, garlic, fresh coriander, lemon juice, and a pinch of salt.

3. Season the Goat Shoulder

  • Rub the preserved lemon and garlic mixture all over the goat shoulder, ensuring it’s evenly coated and pressed into the meat.

4. Roasting

  • Place the seasoned goat shoulder in a roasting pan and add 1/2 cup of water to the bottom of the pan.
  • Cover the pan tightly with aluminum foil and roast for 3 to 4 hours, or until the meat is tender and easily pulls apart with a fork.

5. Crisping the Exterior

  • After roasting, remove the foil and roast uncovered for an additional 20-30 minutes to develop a golden, crispy exterior.

6. Rest and Garnish

  • Once cooked, remove the goat shoulder from the oven and let it rest for 10 minutes.
  • Garnish with fresh coriander sprigs and serve with your favorite side dishes.
