Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 tablespoons melted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, halved
- 1/2 cup chicken broth
- Fresh parsley for garnish
Directions:
- Preheat your oven to 375°F (190°C).
- Pat the whole chicken dry with paper towels and place it in a roasting pan.
- In a bowl, whisk together honey, olive oil, melted butter, minced garlic, fresh thyme, rosemary, Dijon mustard, salt, and pepper.
- Rub the honey mixture all over the chicken, making sure to cover the surface evenly.
- Place the lemon halves inside the cavity of the chicken. Pour chicken broth into the bottom of the roasting pan.
- Roast the chicken in the preheated oven for 1 hour 20 minutes to 1 hour 30 minutes, basting it with the pan juices every 20 minutes.
- Check for doneness by ensuring the thickest part of the chicken breast reaches an internal temperature of 165°F (74°C).
- Remove the chicken from the oven and let it rest for 10 minutes under a loose foil tent.
- Garnish with freshly chopped parsley before serving.
