Greek Gyros Lamb Chops with Lemon-Oregano Potatoes

This is a Greek-style one-tray dinner. Our Greek Gyros Lamb Chops come marinated in-store in oregano, garlic, lemon and olive oil. The potatoes roast in lemony stock until they're golden outside and soft inside, then the chops are seared and served on top with a quick homemade tzatziki.

Ingredients

For the lamb and potatoes

  • 8 Eastern Halal Greek Gyros Lamb Chops (approx. 1kg)
  • 1kg washed potatoes, cut into thick wedges
  • 3 tbsp olive oil
  • 4 garlic cloves, smashed
  • 2 lemons (1 juiced, 1 cut into wedges)
  • 1½ tsp dried oregano
  • 250ml chicken stock
  • Salt and black pepper
  • 100g feta, crumbled
  • Fresh parsley, chopped

For the quick tzatziki

  • 1 cup Greek yoghurt
  • ½ Lebanese cucumber, grated and squeezed dry
  • 1 small garlic clove, finely grated
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh dill or mint
  • Pinch of salt

Method

  1. Roast the potatoes. Preheat the oven to 220°C (200°C fan-forced). Toss the potato wedges with olive oil, garlic, lemon juice, oregano, salt and pepper in a large roasting tray. Pour the stock around the potatoes and roast for 40–45 minutes, turning once, until golden and the liquid has been absorbed.
  2. Make the tzatziki. While the potatoes roast, mix all the tzatziki ingredients in a bowl and refrigerate until serving.
  3. Bring the lamb to room temperature. Take the chops out of the fridge about 20 minutes before cooking so they cook evenly.
  4. Sear the chops. Heat a grill pan or BBQ to high. Cook the chops for 3–4 minutes per side for medium, or a little longer if you prefer them well done.
  5. Rest. Place the chops on top of the roasted potatoes and rest for 5 minutes so the juices soak into the potatoes.
  6. Serve. Scatter with feta and parsley and serve straight from the tray with lemon wedges and tzatziki.

Tips

  • No grill pan? Nestle the chops on the potatoes for the final 12–15 minutes of roasting.
  • Leftover lamb is great sliced into warm pita with tzatziki and tomato.
