Beef schnitzel is lean beef sliced thin and pounded flat in-store. Flattening does two useful things at once: it tenderises the meat by breaking down the fibres, and it lets the schnitzel cook through in minutes without drying out. Around 28g protein per 100g cooked. Crumb it with seasoned flour, beaten egg and breadcrumbs, then shallow fry in about 1cm of oil over medium-high heat for 2 to 3 minutes a side until golden. Do not cover it after cooking or the crumb turns soft with steam. It is also excellent as the base for a parmigiana, or grilled plain for a leaner meal. Rest on a wire rack, not paper, to keep it crisp.
