Goat lungs are a light, spongy offal with a mild flavour and a texture that readily absorbs spice and gravy. They are lean and high in protein, with good iron. Because of their airy structure they cook quickly and take on flavour well.
Rinse thoroughly, then parboil for 10 to 15 minutes before frying or currying, which firms the texture and cleans them. They are the base of a spiced lung fry (a South Asian favourite) and hearty offal curries, often cooked together with other offal in a mixed fry. Cut into even pieces so they cook uniformly. Best cooked soon after purchase, as offal is at its best very fresh.
