Fresh chicken necks from hand-slaughtered birds. For the kitchen, necks are loaded with connective tissue and cartilage, so they draw a stock that sets to jelly when cold, the sign the collagen has done its work; simmer with an onion, carrot and celery for around three hours. For raw feeders, necks are a soft, edible bone suited to dogs and cats as part of a balanced raw diet, high in protein with natural calcium from the bone. Always supervise pets with raw bone and size the piece to the animal. Store cold and use within two days, or freeze on the day of purchase. An economical way to add depth to soups and broths.
