Hot Mexican Chicken Wings — Fresh Marinated, In-Store Prepared

Hot Mexican chicken wings are fresh wings marinated in-store in chilli, paprika, cumin and lime. Marinated the day they are sold, not pre-frozen, so the spice sits on the surface rather than soaking through and drying the meat. Skin-on wings carry around 30g protein per 100g cooked and stay moist under high heat.

Roast at 200C for 35 to 40 minutes, or grill over medium, turning, until cooked through and charred at the tips. Watch them near the end, as the sugar and lime in the marinade catch quickly. Serve with lime wedges, a cooling yoghurt or sour-cream dip and plenty of napkins. Ideal for a spicy barbecue platter.
